Aging pine

We are in the process of putting 6" pine T&G boards on the ceiling
and
walls of our cabin. I have a vague idea that we are supposed to let
it age for ____ period of time before we put a sealer on the wood to
prevent it from yellowing with age.

How long should we wait and what should we put on it to stop
yellowing?

Dont wait it starts aging right away. If you want it looking like it
is now for as long as possible use Acrylic-water base Poly, Oil base
poly or any oil product yellows with age. It will still darken no
matter what you do but not as much. Gloss is clearer than satins so do
first coats in gloss, you will need several anyway. [Although for pine
it probably wont matter] with gloss.

I have T&G pine on my celing, and in order to match the old and new, I used
amber shelac, it made for a good match, cause the varnish or poly finish
used back when the house was build had more amber color, I am guessing from
the linseed oil used more back then,
I used Zinser 3 lb cut right from the can, you can thin it down with
denatured achlol, to chage the color a bit, will lighten it up, but not
darken, multiple coats works for that.
