I am dealing with a cathedral ceiling and where the collar ties and where I
have some cross beams It will be impossible to have a continuous vapor
barrier... what is the way to deal with that?

You really ought to start a new thread. There are a few ways to deal
with this, depending on what exactly you have. you can cut rigid foam
to fit between the collar ties, and caulk (with acoustical sealant)
the poly to the rigid. You can also slit the poly around the collar
ties. In either case, caulk the foam or whatever to the collar ties.
Tape or caulk all seams. It's a bit of work, but it can be made
airtight.

What do you mean by vapor barrier? If you mean the air/moisture
barrier you put on the warm side of a wall in cold climates, then no.
Tarpaper will not work. It is very permeable to moisture. It can be
used on the outside of the building as a building paper.
