Should something like this be covered under warranty? Like I had
mentioned in my OP, the house and furnace are both 16 - 18 months old.

You have the warrantee in with your manuals. Read and profit.

It happened again... woke up this morning, thermostat set to 70, temp
was 66. I heard nothing this time (no gas, nothing). Flip the switch
from "Heat" to "Off" and back to "Heat" again and voila... furnace
running just fine.
If it was a relay, would it be flaking out sometimes (even though it
appears to be getting worse)?
