Not had any experience with this stuff myself, but I'm pretty well
versed in "normal" wiring.
Anyway, a previous owner wired a ceiling fan with Wiremold (looks like
the small size) housing large gauge zip cord; at either end the
Wiremold just stops, and he left like 6 inches of zip cord going into
the fan baseplate, and another foot of zip cord attached to a plug
going into a wall outlet. (PS this is the now-remote-controlled fan
I've been babbling about for a week).
Obviously, this offends my sensibilities, and I want to finish off the
job. I see from the Wiremold site that I can get a starter box that
sits on the outlet box with the outlet on top of it and can start the
wiremold run (with some extra raceway), and I assume I'll figure out
how to do the fand end, but
1) is the wiremold OK for grounding, like conduit is, or do I need to
run a ground wire as well?
2) if I don't need to run a ground wire, do I need to replace the zip
cord with "real" wire? there's about 30 feet of it.
Previous Owner was nice enough to carefully ground the fan to its
baseplate, which is not grounded to anything.....

Wiremold is pretty easy to work with. You usually can get by with a
screwdriver and a hacksaw. I don't know if they make a fan rated Wiremold
box. If not you would need to use some long wood screws on the fan bracket
to go through the wiremold box into a solid wood beam. An electrical supply
house would have a larger selection of Wiremold products and a catalog to
peruse.

Wiremold metal raceway is an approved grounding conductor, but I usually
pull a separate grounding conductor.

Yes. #14 THHN is a good replacement. You can get solid or stranded with
stranded costing more, but is easier to work with. Home Depot sells it by
the foot.
